NYC Here I Come!

I will be taking off a couple of weeks from cooking since I am heading to a culinary class in New York.  My disappointment is that we will still get our weekly produce and I know for a fact Jim will not use ANY of it.  He is just not the cooking type.  Why does he need to be with me creating and cooking our meals.  He does plenty around the house to more than make up for it. 

So, while he will pick up our bounty from our CSA/Market Share, it will be dispursed to our children in the hope they will use it, making wonderful meals.  I have already asked for pictures from them so I can see what they create.  I was excited to hear we were getting garlic and cucumbers added this week.  Maybe I'll throw out a challenge to my two girls and see what they come up with!  I love a good challenge. 

Back to NYC.  I am excited to be taking time for learning.  While I might have a lot of the skills they will be teaching, I am looking forward to gaining additional knowledge on vegetables and vegetarian cooking.  I'll never back down from my Italian meals, but in this day and age, it's important not only to eat healthy, but cook healthy.  Besides, Italian cooking has lots to do with vegetables as they are a staple whether grilled, roasted or in soups. 

I am taking this certificate course with two other woman who feel the same as I regarding eating healthy although Kathy is closer to Vegan than I will ever be.  Tell me, who can live life without cheese?

With that said, I do hope to send in updates on the class itself and possible activities we might try at the end of the day, like eating ourselves through New York.  It's even Restaurant Week while we are there and I'm meeting up with good friends as well.  This could be good...
