Sweet Potato, Edamame and Chicken Surprise
Yes, it was a surprise for my husband. He saw the recipe and thought he was getting a hash made with ham along with eggs for dinner. But no, "Linda always needs to change it up", he says with a frown. Healthy? that's just not for him, but at the end of the day, I'm the cook and he's the taster.
I added fresh thyme along with salt and pepper and after another five minutes, in went a 1/4 cup of chicken broth, edamame and simmered. That was it!
In another pan, I put olive oil and diced onion for a few minutes and added Chicory. Now why do I have chicory you ask? I have no idea, but there it was in my fridge so out it came and jumped into the saute pan. I grew up on iceberg and once in a great while, romaine but never anything else.
Who knew it was good and good for you? This is definitely my year of firsts when it comes to food. I love making new, brightly colored vegetables.
I plated it and Jim set the table. While I was all excited at how good it looked and couldn't wait to dig in, Jim
looked somewhat apprehensive. It was light, delicious, healthy and definitely SUPERFOOD. Eating meals like this will help us live a long and healthy life.
After dinner, Jim looked up and said dinner was good. I asked him if that meant I should make it again and he answered too quickly, NO.
Some things just don't change, but that won't stop me. I will continue making new and exciting food on my quest for healthy living......
