Fabulous & Easy Fruit Tart


While I have been cooking up a storm, I have not been good at getting it documented.  I guess this beautiful Naples weather is getting the best of me.  I am walking most days and most important, making changes to my catering menu while I prepare to transition the business to a much better climate.  Yes, while I write this in 80 degree weather, I hear Beantown is preparing for yet another snow storm.  (she says with a smile on her face)

Last night we had friends to our home for dinner and I wanted to prepare a meal that represented food from where they live in Italy.  I think it was a hit right off the bat as she asked for my appetizer recipe after the first bite!  We had a lovely dinner of Osso Bucco Milanese, Polenta and broccoli rabe, but the star ending was my fruit tart.

Years ago, a friend presented this tart at a dinner and I immediately fell in love.  It just takes your breath away every time with how beautiful it looks.  It's so easy to make and people always think you picked it up at a bakery.  It's a Pillsbury recipe that you can get online.  The only thing I changed was the fruit.  After our initial meeting, I went out and bought a tart pan for both myself and my bff Judy and have been using it ever since.  Actually, I have been using both pans myself.  (Note to self, return Judy's pan)

Fabulous & Easy Fruit Tart

Ingredients

1 Pie crust from a box of Pillsbury refrigerated pie crusts.
1 1/2 Cups vanilla low-fat yogurt
8 oz. Reduced fat sour cream
1 Package (4 servings) instant vanilla pudding
2 Tablespoons orange marmalade
Fruit of choice

Directions

Preheat oven to 450 degrees.  Prepare pie crust by allowing it to rest 15 minutes.  Place in ungreased tart pan and bake for 10-12 minutes.  Cool for 30 minutes


Mix together yogurt, sour cream, pudding and marmalade together until smooth and fill tart crust.


Top with whatever fruit you like or what you find in season or on sale.  Take another 2 tablespoons of orange marmalade and heat to loosen and cover the top of your tart.  You can also use other flavors of marmalade.  That's it!  I added fruit along the side since the big guy gave up sweets for Lent and I wanted him to have something to nibble on while we enjoyed this dessert.  This could be your go to dessert when you want to make an impression.  It's easy, beautiful and tastes delicious!
